Paleo Breakfast Scramble! A yummy, uber-Paleo way to get the day started.
Ingredients:
1/3 lb organic ground beef (can substitute turkey if desired.)
1/3 cup chopped onions
1/3 cup chopped mushrooms
5 large organic eggs (or egg whites)
2 tbsp coconut oil
salt, pepper, tabasco to taste
Directions:
Brown ground beef in over low heat, adding coconut oil, onions and mushrooms.
Scramble eggs in a separate bowl.
Once all beef is cooked, add eggs to mixture, turning up heat. Stir until eggs are cooked.
Kcal: 550
Protein: 56g
Fat: 40 g
I used to like ketchup on my eggs; the slight sweetness of the coconut oil mixed with the zing of the tabasco make for a tasty, Paleo-Proud substitute!
