Another GREAT recipe from CrossFit Norcal… Enjoy!
Skillet Frittata
1 jar roasted red bell peppers, diced
1 container sliced mushrooms
1/2 onion, finely chopped
1 10oz bag frozen spinach
1/2 to 1 lb italian sausage
12 eggs
In a 12 inch, oven safe skillet, crumble italian sausage and cook thoroughly. Remove from skillet. Using fat from sausage, saute the bell pepper, mushrooms, onion and spinach for 6-10 minutes. Add sausage back to the pan and mix completely. In a seperate bowl whisk 12 eggs and season with salt and pepper. Pour egg mixture into skillet, over medium low heat. Pre-heat oven to 400, while eggs set (don’t mix!) for 5-8 minutes. Then place skillet in oven for another 5-8 minutes to lightly brown the top of the frittata. Remove from oven–cool. Slice into wedges and wrap to freeze or serve later in the week!

Hope you are all training hard for sectionals or for life in general. We are getting fat and out of shape with all this great Thai food! We look forward to hitting it hard when we get back! No crossfit here, too hot and humid! Lots of hiking and swimming though…. miss you all and best of luck at the games!

I failed the diet for about two weeks. I’m over my head in the bachelor lifestyle and its a pain in the ass to cook in my living situation. Two good places for eating out – The D&D (how I love thee) has steak breakfast with eggs and cottage cheese on the side for $8-13. And Croutons has some tasty salads with fruits, nuts, and the option to add chicken or salmon for a few bucks more. Anyone else find good eats around town?
