Egg Roll in a Bowl has become one of our favorite meal prep recipes.
I’m all about efficiency & saving time in the kitchen so I’ve simplified this recipe & its ingredients to make it easy & economical. Setting my family up for success weekly is a priority – having healthy already prepared meals in the fridge that we can grab & go keeps us on track with our nutrition goals
2-lbs Ground Chicken (turkey, pork or beef)
14 oz Bag of TriColor Slaw or Broccoli Slaw
1 can Sliced Water Chestnuts
Your Favorite Teriyaki Sauce (I prefer Primal Kitchen’s No Soy Teriyaki Sauce & Marinade)
Seasonings: Salt, Pepper, & Granulated Garlic
Add a small amount of avocado oil to your hot pan(not too much, just enough to keep the meat from sticking) and brown your ground meat.
Season to taste with salt, pepper and granulated garlic.
Cook thoroughly and add a drizzle of coconut aminos and enough teriyaki sauce to lightly coat the ground meat.
Open a can of water chestnuts and dice… add to the meat mixture.
Once it’s cooked thoroughly, transfer to a large casserole dish & add the bag of tricolor cabbage or broccoli slaw (if dressing is included, remove the packet and toss in the trash).
Mix the slaw with the meat and serve it over prepared rice, salad greens or as is! Add scrambled eggs to pack in more protein.
This simple meal is flavorful & filling. It works perfectly for weekly meal prep stored in an airtight container in the fridge for 3-4 days.
